Broccoli and Bacon Pasta Salad
Serves 6 | Prep 15 mins
Ingredients
450g pasta, cooked weight
600g broccoli, raw, cut into florets
300g Eskort Weigh-Less Smoked Bacon
135ml Weigh-Less Reduced Oil Dressing
2 tsp white vinegar
30g sunflower seeds
Salt and pepper
Weigh-Less Non-Stick Spray
Method
1. Using kitchen scissors cut the bacon into thin strips and grill in a pan that has been coated with non-stick spray, set aside to cool.
2. Mix together the reduced oil dressing, vinegar and seasoning.
3. Mix the dressing mixture with all the ingredients and leave in fridge to chill.
Notes
1 Serve = 1 ½ CC + 1 Veg + ½ Protein + 1 Fat
