Balsamic Roasted Tomatoes Recipe

Balsamic Roasted Tomatoes
Serves 4 | Prep 15 mins

Ingredients
400g cherry tomatoes, halved
200g onion, sliced
10ml Weigh-Less Extra Virgin Olive Oil
10ml Weigh-Less Balsamic Vinegar
2 garlic cloves, finely sliced
A handful of fresh basil
Salt and black pepper


Method

1. Heat oven to 180°C.
2. Mix all the ingredients together well (except basil) and place on a baking try.
3. Roast in preheated oven for 15 minutes, add the basil leaves and roast for a further 5 minutes.
4. Remove from heat and either serve with cooked pasta from your daily serves, or with crusty wholewheat rolls.
Notes
1 Serve = 1 ½ Veg + ½ Fat
